In our Paleo version of French Onion Soup, we added mushrooms as a rich source of protein. You can use any type of mushroom you prefer, as they all work well in this recipe. Button and oyster mushrooms bring a slightly sweeter flavor, while shiitake and portobello mushrooms offer a savory taste. If you don’t want to take your chances with storebought beef bone broth and the possible additives it contains, you can make homemade beef bone broth in the comfort of your own home. You can save the leftover bone broth and make pork chops or wild game chili by storing the broth in an airtight container in the refrigerator for up to seven days.

French Onion Soup

Ingredients
1 tbsp olive oil
1 yellow onion, thinly sliced
1 sweet onion, thinly sliced
2 garlic cloves, minced
1 cups organic white wine
3 thyme sprigs, minced, plus more for garnish
4 sage leaves, minced
2 tsp onion powder
1 tbsp arrowroot flour
1/2 cups mushrooms, diced
3 cups no salt-added beef bone broth
Directions
Heat olive oil in a medium pot over medium heat. Add sliced onions and garlic; let cook for 12 minutes, stirring occasionally.
Deglaze the pot with white wine and add thyme, sage, onion powder, and arrowroot flour. Simmer for 8 minutes.
Add beef broth and chopped mushrooms. Simmer for another 5 minutes.
Top with fresh thyme sprigs and serve hot.
