This egg-wrap Veggie Breakfast Burrito is a great vegetarian option for those who want a hearty breakfast without animal-based proteins. The recipe pairs compatible toppings like spinach and tomatoes for a superb flavor pairing with great health benefits. Spinach has been proven to help decrease the risk of chronic diseases because of its low omega-6-to-omega-3 ratio,1 while, tomatoes can help boost your immune system due to their great bioactive properties.2 

We swapped tortillas for egg wraps in this breakfast burrito to avoid grains and add extra protein to this meal. Before assembling, make the wraps by following our Egg Wrap recipe. And if you don’t have Paleo ketchup on hand, make a batch at home for a healthier dipping sauce. 

If you’re not vegetarian and want to add animal-based protein to this recipe, we recommend sautéed diced pork belly, steak, or ground pork to add to the filling. For a plant-based protein option, we suggest sautéed sliced mushrooms.

Ingredients

  • 4 egg wraps

  • 1/2 cups tomatoes, diced (AIP - omit)

  • 1/2 cups red onion, diced

  • 1 cups baby spinach

  • 1 avocado, cubed

  • 1/4 cups parsley, for garnish

  • 2 lemon wedges

  • 1/4 cups Paleo ketchup (AIP - omit)

Directions

  1. Place each egg wrap on a plate. Add tomatoes, red onion, baby spinach, avocado, and parsley to the center of each wrap. Take care not to overload the burrito so the egg wrap doesn’t tear when folding.

  2. Top burritos with a squeeze of lemon to taste, then fold over each side in to meet in the middle.

  3. Serve burritos with a side of Paleo ketchup.
