Upgrade your burger game with these better-for-you Spinach Turkey Patties that don’t skimp on flavor. They’re quick to put together and super versatile, perfect for the grill or a stovetop cast-iron skillet, whichever you prefer! 

These Spinach Turkey Patties aren’t just high in protein; they also reheat beautifully. Warm them in a skillet over medium heat with a bit of olive oil, flipping after about 4 minutes. Alternatively, place them on a microwave-safe plate lined with a paper towel and microwave in 30-second intervals for up to 1 minute and 30 seconds. Use lettuce leaves or cooked sweet potato rounds to make grain-free turkey burgers or chop up the patties to serve over salad, riced broccoli, or in a power bowl for a quick, protein-packed lunch any day of the week. 

We use salt-free sundried tomatoes in the patty mixture. If you can’t find them in stores or have extra tomatoes at home, you can make your own. A dehydrator works well if you have one, but here’s a simple oven method:  

  • Preheat oven to 275°F. Chop tomatoes into small pieces and spread on a parchment-lined baking sheet. Sprinkle with oregano and salt-free lemon pepper.  
  • Bake for about 2 hours and 30 minutes or until dry.  
  • Store dried tomatoes in a sealed container. Soak in olive oil for 15 minutes before using. 

Don’t forget about the toppings! For an optimal flavor pairing, prepare a side of Paleo Ranch to spread on these turkey burgers. Prefer a more traditional route? Try Paleo Ketchup or Dijon-Style Mustard instead. But don’t stop there—add pickled onions, sliced tomatoes, pickles, or extra lettuce to build your perfect burger. The options are endless! 

TIP: Swap the red onion for shallot to give your Spinach Turkey Patties a sharper bite.

Ingredients

  • 1 lb ground turkey

  • 1/2 red onion, diced

  • 1/2 cups salt-free sundried tomatoes (AIP - omit)

  • 1/2 cups spinach, finely chopped

  • 1/2 tsp black pepper (AIP – omit)

  • 1 tsp onion powder

  • 1/2 tsp fresh dill

  • 1 tsp oregano

  • 2 tbsp olive oil

  • 8 lettuce leaves

Directions

  1. In a medium bowl, mix turkey, red onion, tomatoes, spinach, black pepper, onion powder, dill, and oregano. Form into 4 patties about 1-inch thick.

  2. Preheat olive oil in a grill pan or cast-iron skillet over medium-high heat. Add patties and cook for 10 minutes per side, or until internal temperature reaches 160°F.

  3. Assemble turkey burgers: Place Spinach Turkey Patty on top of a lettuce leaf and spread with Paleo ranch or ketchup. Add your favorite toppings and finish with another lettuce leaf.
