Our recipe for Paleo Chicken Chips ensures this crispy, crunchy treat follows Paleo principles while keeping you full, supporting muscle health, and providing lasting energy. In addition, because they’re not fried, Chicken Chips are also lower in unhealthy fats, making them a smart snack choice for anyone following a Paleo lifestyle or looking for a healthier snack option. 

Chicken Chips taste great on their own or, with a little creativity, make a great gluten-free or potato-free addition to other recipes. Use them as the base for Paleo tostadas, crumbled over a salad, or rolled into a thicker layer to make a dairy-free chicken crust pizza. For a fun twist, thoroughly oil your waffle maker and cook the chicken mixture for about 5 minutes to create chicken waffles!

Tips:

  • Chicken Chips may differ in cook times depending on your oven and how thin you roll the mixture. Check the oven around the 30-minute mark and adjust the remaining time if needed.

Paleo Chicken Chips

Ingredients

  • 1 lb ground chicken

  • 1 tsp baking soda

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • 1/4 tsp cumin

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. In a food processor or medium bowl, thoroughly mix all ingredients together until the mixture reaches a paste-like texture.

  3. Place chicken mixture in the middle of the baking sheet. Cover with plastic wrap and use a rolling pin to flatten the chicken into a thin layer (if the layer is more than ¼ʺ thick, remove half the mixture and cook in batches).

  4. Remove the plastic wrap and transfer the baking sheet to the oven. Bake for 45 minutes or until crispy.

  5. Let cool for at least 20 minutes (chicken will continue to harden during this time).

  6. Use a pizza cutter or break the chips with your hands into bite-sized pieces. Enjoy chips the day of baking or store for a few days in an airtight container.
