Green Goddess Guacamole
If you like your guac uber-green and extra smooth, try this Paleo-friendly green goddess guacamole! It’s great in everything from bowls, burgers, tacos, and even a healthy dip for veggies.
We named this healthy guac after the herb-packed green goddess salad dressing everyone knows and loves. While we used cilantro, green onions, and parsley to get this guacamole extra green. You can also use more traditional green goddess herbs like chives, terragon, or even chervil. It’s also AIP-friendly! Just be sure to skip the optional black pepper.
To get that pungent oniony flavor, we used a combination of garlic powder and dried onion flakes. Of course, you can always use fresh red onion and garlic instead!
They key to this green goddess guacamole is the way it’s prepared. Instead of mashing it until thick, we put all the ingredients in a food processor and pulsed until whipped and fluffy.
Guacamole tastes great in everything, so serve immediately as a dip, condiment, side dish, or accent to your favorite dish. You really can’t go wrong!
