• 2 sweet potatoes, peeled and roughly chopped
  • 1 tbsp coconut oil
  • 1 apple, cored and diced
  • 1 tsp cinnamon
  • ½ cup chopped nuts
  1. Place the chopped sweet potatoes in a pot. Cover with water by at least one inch, bring to a boil and cook until soft (about 20 minutes). Drain, then add coconut oil and mash with a fork.
  2. Divide the mashed sweet potatoes among two serving bowls. Top each bowl with one half of the diced apples, chopped nuts, and a sprinkle of cinnamon.
