Mango Lassi is great to make when the weather gets warmer and you need a refreshing drink to cool you down. This recipe can even be frozen into popsicle molds to create an easy summer treat for the whole family. 

Mangos bring a lot to the table. Not only are they naturally sweet in flavor, but they are also loaded with health benefits. Mangos are rich in polyphenols, specifically gallic acid and gallotannins,1 which can have anti-inflammatory properties and support cellular health.  

We use cashew milk in this Mango Lassi recipe because it complements the flavors of coconut and mango. However, you can use any nut milk you have on hand. Consider making your own dairy-free milk to use throughout the week and in Paleo meals. The recipe is for almond milk—but it also works for cashews. 

TIPS:  

  • To quickly cube a mango, cut around the large pit in the middle, then score the halves, flip the peel outward, and slice the cubes off the peel. 
  • Short on fresh mangos? Replace with 1 ½ cups of chopped frozen mango instead.

Ingredients

  • 1 can coconut cream, chilled in the fridge overnight

  • 2 small mangos

  • 1/4 cups cashew milk

  • 1/2 cups ice cubes

  • 2 tsp raw honey

  • 2 tsp lemon zest, divided

  • 1/2 tsp ground cardamom

  • 1/4 tsp vanilla extract

  • Crushed raw cashews, for garnish

Directions

  1. Wash and prep all ingredients. Peel and cube mangos.

  2. To a blender, add coconut cream, mangos, cashew milk, ice, honey, 1 teaspoon lemon zest, cardamom, and vanilla. Blend on high until smooth. If the consistency is too thick, add a splash of milk and blend again.

  3. Pour Mango Lassi between two glasses. Garnish with 1 teaspoon lemon zest and crushed cashews. Serve cold.
