Short on time and need a last minute appetizer for your get together? These stuffed tomatoes take less than 15 minutes to make.These colorful little appetizers pair quite well with an evening barbecue or a dinner party with friends and family.

Not only do tomatoes make the perfect party snack, but they are a good source of antioxidants making them one of the best anti-inflammatory foods to eat! Tomatoes also contain retinoids (vitamin A-like compounds) and lycopene, making this a tasty and super healthy snack choice.

The combination of tomatoes stuffed with spinach will leave your guests mouth’s buzzing with flavor! Be sure to make plenty as they are bound to disappear in a hurry.

  • 12 cherry tomatoes

  • 1 tbsp extra virgin olive oil

  • 1/4 cups minced scallions

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tbsp minced garlic

  • 1/2 cups spinach, finely chopped

  • 1/2 tbsp fresh cilantro leaves, chopped


  1. Slice off stems and tops of each tomato. Use a spoon to scoop out and discard the seeds from tomatoes, leaving them hollowed.

  2. In a small bowl, combine scallions, basil, oregano, garlic, and spinach.

  3. Heat oil in a small skillet over medium flame.

  4. Add mixture and sauté for two minutes, stirring consistently.

  5. Remove from heat and cool for ten minutes.

  6. Spoon the mixture into the tomatoes and garnish with fresh cilantro.
