Tired of noshing on plain fruit? This watermelon recipe takes the best part of the fruit salad and dresses it up with savory ingredients like shallots, basil, and spicy jalapeño. It’s a fun take on a refreshing classic that makes your summertime favorite taste brand new again!

All you need is a few minutes of prep time to pull this salad together. Start by cubing up about 3 cups of fresh watermelon. Mix in with chopped shallots, basil leaves, and small jalapeño pepper, then season to taste with lime juice, lime zest, and freshly cracked black pepper. Keep tasting as you go to make sure all the flavors are balanced the way you like them.

Then, stick your watermelon salad in the fridge. The longer you let it chill, the better the flavors will marry.

Tip: Try serving it over a bed of microgreens!

Ingredients

  • 3 cups watermelon, cubed

  • 1/2 cups shallot, chopped

  • 3 leaves basil, chopped

  • 1 small jalapeño, chopped

  • Lime juice and zest, to taste

  • Cracked black pepper, to taste

Directions

  1. Toss the watermelon, shallots, basil and jalapeño together in a mixing bowl.

  2. Season to taste with lime juice, zest, and black pepper.

  3. Chill at least 15 minutes, then enjoy!
