Rose, Ginger & Mint Matcha Latte

Ingredients
20 fresh mint leaves
1/2 tsp fresh grated ginger
1/2 cups boiled water
2 tsp organic matcha powder
1/2 tsp rosewater
1 1/2 cups unsweetened almond milk (AIP - subsitute with coconut milk)
Directions
Steep mint leaves and grated ginger for 10 minutes in water just off a boil. Strain out solids.
Add matcha powder and use a matcha whisk or handheld frother until well combined and frothy.
In a separate saucepan, gently warm almond milk over low heat, watching closely so as not to burn it. Add rosewater.
Combine almond milk with infused matcha and froth again to mix ingredients. Enjoy warm.
