This Paleo Coconut Macaroons recipe offers up a delightful treat that’s incredibly easy to make—all you need are three ingredients, 20 minutes, and an empty stomach! 

Macaroons are often confused with macarons, and while they share similarities, they are two distinct types of pastries. Macaroons are sweet, dense cookies typically made with shredded coconut. In contrast, macarons are sandwich cookies with a creamy filling between two colorful rounds of meringue. [1] Both are made with egg whites, sugar, and are gluten-free.  

To make our macaroons even healthier, we’ve skipped the sugar and use whole eggs in this Paleo treat. And instead of milk chocolate, we dip the cookies in melted cacao wafers. Cacao is rich in health benefits and has the power to decrease blood pressure, lower the risk of diabetes and heart disease, reduce inflammation, improve mood, enhance brain function, and even boost performance. [2] Talk about a super food!

Ingredients

  • 2 eggs

  • 2 1/2 cups unsweetened shredded coconut

  • 1/2 cups cacao wafers

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk eggs. Add unsweetened coconut and mix well with a spatula.

  3. Set aside for at least 20 minutes.

  4. Use a tablespoon to scoop cookies onto the prepared baking sheet, about 2 inches apart.

  5. Bake 15 minutes or until they turn golden brown.

  6. Remove macaroons from the oven and allow to cool.

  7. Place cacao wafers in a microwave-safe bowl. Microwave in 30-second increments until fully melted, stirring after each interval.

  8. Line a baking sheet with fresh parchment paper. Dip the bottoms of the macaroons in melted cacao and place on the sheet. Allow to set at room temperature before serving.
