One-Skillet Rhubarb Chicken

Ingredients
3 green onions
3 tbsp olive oil, divided
2 bone-in, skin-on chicken breasts
4 bone-in, skin-on chicken drumsticks
2 tbsp herbes de Provence (AIP – omit or use seed-free version)
1 cups rhubarb, chopped into ½ inch pieces
1/2 tsp crushed red pepper flakes (AIP – omit or sub)
Directions
Preheat oven to 400°F. Slice green onions, separating whites from greens.
Heat 1 tablespoon olive oil in a large, oven-safe skillet over medium heat. Sauté onion whites until softened. Remove from pan.
While onions cook, pat chicken dry and season all over with herbes de Provence.
In the same pan, heat 1 tablespoon olive oil over medium-high heat. Add chicken skin-side down and sear until golden brown, about 4–5 minutes. Flip and sear for another 2 minutes.
Add remaining tablespoon olive oil to pan, then scatter cooked onion whites and rhubarb around chicken. Sprinkle with red pepper flakes, then place the skillet in the oven (if you don’t have an oven-proof skillet, transfer ingredients to a baking dish).
Roast until chicken reaches an internal temperature of 165°F, about 25–35 minutes. Let the meat rest for 10 minutes before slicing.
Sprinkle with reserved green onions and serve with drippings.
