You’ve heard of French onion soup, but what about French Onion Steak? We took the hearty flavors of the classic recipe and made a dairy-free mushroom-onion sauce to pour over your favorite seared steak. Just add a couple comforting sides and you’ll have a rich, filling meal.

Many cuts of steak work well with French Onion Steak, though sirloin a common choice. For this recipe, we used New York striploin from Origin Provisions, which sells high quality grass-fed beef at an affordable price. All their products are either regeneratively raised or organic; regenerative, grass-fed cattle are not only responsibly raised but also proven to be more nutrient-dense than conventional grain-fed cattle.

We also used beef tallow as our cooking fat, which provides a unique flavor and potential inflammation-reducing stearic acid (when consumed in moderation). If you don’t have beef tallow, a high-heat cooking oil like avocado or macadamia oil will do.

TIP: If you buy beef broth from the store for this recipe, make sure there’s no sodium added. Otherwise, you can make your own beef bone broth at home. Simply store the remaining broth in 1-cup portions in the freezer to use when you need it! Large, freezer-safe silicone molds like Souper Cubes are perfect for preserving liquid portions.

French Onion Steak

Ingredients

  • 8 oz steak (choice cut)

  • 1 tbsp fresh thyme, minced

  • 1 tsp freshly ground black pepper

  • 2 tsp garlic powder

  • 2 tbsp beef tallow, divided

  • 1/2 cups cremini mushrooms, minced

  • 1 cups white onion, thinly sliced

  • 1 cups beef bone broth

Directions

  1. Season steak all over with thyme, pepper, and garlic powder.

  2. In a medium cast-iron pan, heat 1 tablespoon beef tallow over medium-high heat until melted. Sear on each side for about 2 minutes. Place on a cutting board to rest.

  3. Reduce heat to low-medium and melt remaining beef tallow in the same pan. Add mushrooms and onion and cook until soft, about 10 minutes. Add broth and bring to a simmer.

  4. Place steak in French onion sauce and let simmer for 5 minutes.

  5. Remove steak and slice crosswise. Top with French onion sauce and serve immediately.
