Eggplant and Italian Sausage Casserole

Hearty and savory, this baked eggplant dish with Italian sausage is easy to meal prep for filling lunches or dinner throughout the week. Sweet potatoes and shallots round out the flavors, but if you want to elevate the taste even more, feel free to season with your choice of herbs and spices, such as:

  • Black pepper
  • Rosemary
  • Thyme
  • Basil
  • Garlic
  • Cinnamon
  • Cumin

  • 2 large eggplants, diced

  • 3 sweet potatoes, diced

  • 4 shallots, diced

  • 1/2 cups extra virgin olive oil

  • 6 Italian sausage links, uncased and chopped


  1. Preheat oven to 400°F.

  2. In a 13" x 9" glass pan or casserole dish, mix eggplant, potatoes, shallots, and sausage with olive oil until evenly coated.

  3. Bake for 30-40 minutes or until sausage is cooked and eggplant is golden.
