We baked these chicken bites to reduce the potential harm from oxidized fats and starches that occur with frying in oil. However, you can also grill them or use an air fryer. No matter which method you choose, ensure the internal temperature reaches 165°F before serving.
- For the grill: Preheat to medium heat and cook for 10 minutes, flipping halfway through.
- For the air fryer: Preheat to 380°F and cook for 12 minutes, or until crispy.

Barbecue Baked Chicken Bites

Ingredients
1 1/4 cups almond flour (AIP - substitute with coconut flour)
1 tsp onion powder
1/2 tsp paprika
2 eggs
1/2 tsp black pepper
1 lb chicken breast, cut into bite-sized pieces
1/2 cups Paleo barbecue sauce
Directions
Preheat oven to 400°F. Grease the bottom of a baking sheet with coconut oil or line with parchment paper.
In a medium bowl, whisk almond flour, onion powder, and paprika.
In another medium bowl, whisk eggs and black pepper until fully incorporated.
Dredge each chicken bite in the whisked eggs, then toss in almond flour mixture until fully coated and place on baking sheet.
Bake chicken bites for 10 minutes, then flip and continue baking for another 10 minutes, until crispy and cooked through (internal temperature of 165°F).
Serve chicken bites with barbecue sauce on the side.
