If you don’t have all the ingredients around your kitchen, feel free to mix and match with your own Paleo toppings. Some healthy substitutions are walnuts, pomegranate seeds, raspberries, flaxseeds, diced pineapple, sliced almonds, pumpkin pie spice, nutmeg, or any type of Paleo nut butter.
You can enjoy Banana Boats at home or assemble when camping for a delicious treat outdoors. For a camp-friendly version, keep the peels on your bananas, only stripping one side off so the fruit is contained in the rind. Make a slit down the middle and add the cacao (no need to melt) and other toppings, then wrap in foil and cook over the campfire until the banana is gooey-soft!

Ingredients
2 oz 100% cacao
1 tbsp coconut oil
2 bananas
1/2 cups blueberries
1/2 cups strawberries, chopped
1/4 cups pecans, chopped (AIP - omit)
3 tbsp hemp seeds (AIP - omit)
1/4 cups shredded unsweetened coconut
1 tbsp cinnamon
4 tbsp almond butter (AIP - omit)
2 tsp raw honey
Directions
Heat a small pot over low-medium heat. Add cacao and coconut oil. Cook 5-10 minutes until melted, stirring occasionally. Remove from heat.
Slice bananas lengthwise and lay them on a plate. Sprinkle with blueberries, strawberries, pecans, hemp seeds, coconut, and cinnamon. Drizzle with almond butter, melted cacao, and honey. Serve immediately.
