Quick Paleo Turkey Meatloaf

Ingredients

  • 1 tbsp. extra virgin olive oil 

For the meatloaf: 

  • 2 pounds ground turkey 
  • 1 egg 
  • 3 tbsp almond meal 
  • 1 tsp chili flakes 
  • 1 ½ tsp dried parsley 
  • 1 tsp garlic powder 
  • ½ tsp black pepper 

For the sauce: 

  • ½ cup organic tomato sauce (no sugar or salt added) 
  • 1 pitted date (optional) 
  • 1 garlic clove 

Instructions

  1. Preheat oven to 350 F. 
  2. Lightly grease a loaf pan with olive oil and set aside. 
  3. To make the meatloaf, place all ingredients in a large bowl and mix to combine. Place meatloaf mixture into prepared pan and bake for 40-60 minutes or until inside is no longer pink. 
  4. To make the sauce, place the tomato sauce, date and garlic in a blender and blend until smooth. Transfer to a small saucepan and bring to a boil over medium heat. Once sauce begins to boil, remove from heat. 
  5. Remove meatloaf from the oven, top with sauce and serve immediately.
