• ¾ cup finely chopped pecans, divided
  • 1 cup pitted Medjool dates
  • ½ cup pumpkin puree
  • ¼ cup ground flax meal
  • 1 tsp pumpkin spice
  • ¼ cup finely chopped pecans
  1. Add ½ cup of chopped pecans to a blender with all the other ingredients.
  2. Blend until combined, but not completely smooth.
  3. Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.
  4. Use a spoon to scoop the mixture evenly, then form into balls.
  5. Roll each lightly in the remaining finely chopped pecans. Enjoy!
