• 2 eggs
  • 1 tsp avocado oil
  • 1 green onion, thinly sliced
  • 1 small bell pepper, thinly sliced
  • ½ cup sliced mushrooms
  • ½ tsp salt-free Italian herb spice mix
  • 1 handful fresh spinach leaves, stems removed
  • ½ fresh avocado, thinly sliced
  1. Scramble eggs in small bowl and set aside.
  2. In a small frying pan, heat the avocado oil over medium heat. Add onions and pepper and cook for 2-3 minutes, stirring every 30 seconds.
  3. Add the mushrooms and sprinkle evenly with the spice mix. Continue cooking until mushrooms are softened.
  4. Add the spinach and stir until spinach is wilted, about 2 minutes.
  5. Add the scrambled eggs and stir until eggs are done to your liking. Serve with fresh avocado, and enjoy!
