Ingredients
 
  • ½ cup coconut oil, melted and cooled
  • 2 tbsp molasses
  • ¼ cup coconut sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • 1 tbsp ground flax
  • ½ tsp baking soda
  • 1 ½ tsp ginger
  • ¾ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp cloves
Instructions
 
  1. Preheat oven to 350°F.
  2. In a small mixing bowl, whisk together the coconut oil, molasses, coconut sugar, vanilla, and the egg.
  3. In another medium-sized mixing bowl, combine the almond flour, coconut flour, flax, baking soda, and spices.
  4. Slowly pour the wet ingredients into the dry ingredients and stir until evenly combined. Let the dough rest for a few minutes.
  5. Use a tablespoon to scoop the dough, then use your hands to roll into a ball about 1-1 1/2 inches in diameter. (There should be 12 cookies total.)
  6. Place the rolled dough onto the prepared baking sheet and lightly press down with a glass dipped with almond flour to prevent from sticking.
  7. Bake the cookies for 10 minutes, or until the top start to crackle. Cool completely, then enjoy!
