• 2 bunches of beets
  • 2 tbsp avocado oil
  • 1 lemon, zested
  • 4 rosemary springs, chopped
  1. Preheat the oven 375°F.
  2. Wash and scrub the beets well, then slice as thin as possible. Add to a bowl with the avocado oil, lemon zest, and rosemary and toss well to combine.
  3. Arrange the beets in a single layer on a baking sheet. Add to the preheated oven and roast for 20 minutes, , then flip and cook for another 15 minutes. Watch closely to make sure they don’t start to burn!
  4. Remove from the oven and let your beet chips cool before serving.
