Ingredients
 
  • 1 cup ripe cantaloupe, cubed
  • ½ inch piece of peeled ginger
  • 1 cup unsweetened coconut milk
  • ½ cup ice
  • 3-4 fresh mint leaves, plus more for garnish

  1. Combine ingredients in a blender and blend until smooth and creamy.
  2. Pour into a glass, garnish with fresh mint, and enjoy right away.
