Ingredients
 
  • 6 cups shredded zucchini, strained
  • ½ cup flax meal, plus more if needed
  • 2 eggs, beaten
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ⅛ tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Lemon wedges, for garnish (optional)
Instructions
 
  1. In a mixing bowl, combine the shredded zucchini with the flax meal, eggs, and spices. If the batter is too wet, add more flax meal.
  2. Heat the olive oil in a large skillet over medium heat. Use a ¼ measuring cup to scoop the zucchini mixture into the pan and flatten it to form a patty shape. Repeat with the remaining batter. Cook each side for about 3-5 minutes, or until golden brown. You may need to work in batches. Set the finished patties on a baking rack so they don’t get soggy.
  3. Serve your zucchini fritters hot, garnished with lemon wedges if you prefer.
