Blueberry-Cherry Beet Smoothie

Getting tired of relying on spinach as your main smoothie veggie? Try beets, which pair nicely with a variety of fruits to balance the earthy flavor with something sweet. Let’s bring it on with beets and berries!

This show-stopping smoothie is a nutritional powerhouse. It’s filled with antioxidants that support your brain and digestive health, help lower blood pressure, and reduce inflammation. Beets are naturally sweet, and add a vibrant pop of color.

To make your Blueberry-Cherry Beet Smoothie, simply add all the ingredients (except the flax seeds) to a blender and mix until creamy and smooth. Pour into your favorite glass and drink as is, or top with extra blueberries and a sprinkle of flax seeds.

Tips:

  • Frozen fruit gives smoothies a thick and creamy consistency; fresh fruits tend to get mushy. For best results, slice the bananas ahead of time and freeze until ready to use. They’ll blend up quickly, and add the cold creaminess you’re after. You can also add more bananas if you want it to be sweeter.
  • If you don’t like bananas, use frozen mangos or pineapples.
  • For toppings, add anything you are craving: nuts, Paleo granola, different berries, or a Paleo-compliant protein powder.

Ingredients

  • 1 cups coconut milk

  • 3/4 cups frozen blueberries, plus more for topping

  • 1/2 cups frozen cherries

  • 1/2 cups beets, grated

  • 1 frozen banana, chopped (AIP - substitute with chopped pineapple)

  • 1 tbsp flax seeds

Directions

  1. Add all ingredients except flax seeds into a blender. Blend on high speed for 50-60 seconds, until creamy and smooth. For a thinner mixture, add more coconut milk.

  2. Pour smoothie into a glass. Top with extra blueberries and sprinkle with flax seeds, if desired. Serve immediately.
