Fragrant banana bread is made with nutty almond flour for a healthier slice of comfort food.
All you need are six simple ingredients to throw this easy banana bread together. Simply mix the wet and dry ingredients separately, then combine, pour, and bake!
In addition to extra ripe bananas, we used a bit of raw honey to help sweeten the bread. You can also add a dash of vanilla extract if you like. We also added apple cider vinegar to the batter for a healthy acid that helps activate the baking soda, but you can also use lemon juice in a pinch. Instead of regular flour, we used a combination of hearty almond flour and airy arrowroot flour for a gluten-free base filled with fiber and vitamins.
Start by lining a 4×8 inch bread pan with parchment paper. Tip: You can also grease a muffin tin and make muffins instead – just adjust the baking time to 25 minutes. Mix the wet and dry ingredients separately, then mix until just combined, taking care not to overmix.
Pour the batter into the prepared pan and bake for about 35 minutes. Baking times can vary, so use a toothpick to start checking to see if it’s done around the 30-minute mark. Once the toothpick comes out clean, remove from the oven and let it cool in the pan for at least five minutes.
Transfer the bread to a cutting board, then slice and serve!
Tip: We kept this recipe as simple as possible, but you can also add a few mix-ins to the batter for even more flavor. Try cinnamon, ginger, raisins, chopped pecans, or sliced almonds!
