Ingredients
 
  • 2 tbsp olive oil, divided
  • 1 ½ lb chicken breast, sliced into bite-sized pieces
  • 4 garlic cloves, minced
  • 1 large head broccoli, cut into florets
  • 1 cup low-sodium chicken broth
  • Black pepper (optional, omit for AIP)
Instructions
 
  1. Warm 1 tablespoon of olive oil in a wok or large pan over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken to a plate and set aside.
  2. Wipe out the pan and pour in the remaining olive oil. Add the garlic and cook for about 30 seconds, then add the broccoli and chicken broth. Stir and cover until the broccoli is soft, about 5 minutes more.
  3. Add the chicken back into the pan. Let it cook for about 2 more minutes, or until chicken is cooked through.
  4. Remove from heat, sprinkle with black pepper (if using), and serve!
