Ingredients

  • 2 cucumbers, diced

  • 3 Roma tomatoes, diced (AIP - omit)

  • 1 red onion, diced

  • 2 tbsp black pepper, (AIP - omit)

  • 2 cloves garlic, diced

  • 3 tbsp dried basil, chopped into small pieces

  • 4 tbsp olive oil

  • 1 tbsp balsamic vinegar

Directions

  1. Add cucumbers, tomatoes, red onion, pepper, garlic, and basil to a small bowl.

  2. Prep the dressing by adding the olive oil and vinegar to a jar.

  3. Shake the dressing and pour over the salad.

  4. Mix all together, serve right away, or store in the refrigerator until ready to eat.
