Everyone loves a classic meatball, but sometimes it’s nice to switch things up. These Bison Meatballs bring a fresh twist to the table and are perfect for adding variety to your weekly rotation. 

Bison is naturally leaner than beef, with fewer calories and less fat, while offering higher levels of iron and beneficial polyunsaturated fatty acids.¹ Its elevated iron content gives it a slightly earthier flavor than beef, which creates a distinctive taste. To balance the richness, we recommend pairing these Bison Meatballs with a sweeter sauce, such as Paleo Barbecue Sauce or plum jam.

Ingredients:

  • 1 cups dried plums
  • 1 TBSP flax seed meal
  • 1/2 cups apple juice, freshly squeezed

Directions:

  1. Combine all ingredients in a food processor until well combined.
  2. Store in an airtight jar in the fridge.

Bison Meatballs

Ingredients

  • 1 lb ground bison

  • 1 egg

  • 1/2 cups white onion, diced

  • 2 tsp chives, chopped

  • 2 tsp rosemary, chopped

  • 1 clove garlic, minced

  • Paleo dipping sauce, optional

Directions

  1. Prepare a baking sheet with parchment paper.

  2. Preheat oven to 350°F.

  3. In a large mixing bowl, add ground bison, egg, onion, chives, rosemary, and garlic. Mix until thoroughly combined.

  4. Form mixture into 2-inch balls and place on prepared baking sheet. Bake until cooked through, about 20 minutes.

  5. Remove meatballs from oven and let cool for 5 minutes. Serve with Paleo BBQ Sauce or Paleo Plum Jam.
