

Looking for a simple, hydrating snack for a hot summer day? We took inspiration from Logan Moffitt’s viral cucumber salad videos and made our own with Paleo ingredients. Just add everything into a sealable container and shake it up for a quick bite in under 10 minutes.
There is no better feeling than the crisp crunch of cucumbers mixed with our Paleo Sour Cream and Tzatziki sauces, which we recommend making ahead of this recipe to save on time. With the addition of homemade everything bagel seasoning (poppy seeds, sesame seeds, and onion powder), dill fronds, and green onions, this cucumber salad imitates the creamy and crunchy delight of a bagel.
Take this Everything Bagel Cucumber Salad with you for an easy work lunch or as a side for picnics and barbecues. The salad will have more crunch if you enjoy it immediately, or you can let it marinate in the fridge for an hour to have a softer, more flavorful bite.
TIPS:
- A mandoline will help get evenly sliced cucumbers and can be done over the salad container. The thickness is your preference—thicker slices will have a solid crunch. We used a medium setting.
- Onion flakes can also work instead of onion powder.

Logan’s Everything Bagel Cucumber Salad

Ingredients
1 cucumber, thinly sliced
2 tbsp Paleo sour cream
1 1/2 tbsp Paleo tzatziki
3 tsp freshly squeezed lemon juice
1/2 tsp apple cider vinegar
1 clove garlic, minced
1 dill frond, chopped
2 green onions, sliced
2 tsp poppy seeds
2 tsp sesame seeds
2 tsp onion powder
Directions
To a quart-size container or Mason jar, add cucumber slices.
In a separate bowl, mix sour cream and tzatziki with lemon juice and apple cider vinegar. Once consistently mixed through, pour into container with cucumbers. Add garlic, dill, green onions, poppy seeds, sesame seeds, and onion powder.
Seal the container and shake vigorously for about 2 minutes or until the salad is thoroughly mixed.
