

Coffeehouse refreshers are often overpriced, not to mention loaded with sugars and additives. Save a few dollars by making a caffeinated refresher at home, like this Sparkling Matcha Tea.
Matcha is a great alternative to coffee, not only for its fun colors and earthy taste, but because it also contains just as much caffeine without the caffeine crash. How, you ask? Matcha contains L-theanine, which works with caffeine to help increase energy levels and has the potential to reduce stress and anxiety.1
When making a cold drink, natural sugars like honey or maple syrup don’t mix well when added directly because they won’t dissolve fast without heat. That’s why, for this recipe, we heat a small amount of water with honey to create a simple syrup that adds both flavor and a touch of natural sweetness.
To optimize the taste and concentration of the matcha, we steeped the tea in sparkling water using a sealed container to preserve the carbonation. The recipe below recommends steeping for at least 3 hours, but you can steep it longer for a more robust flavor. However, avoid leaving the sparkling water uncovered or sealed for more than 8 hours, as this can affect the quality.
TIP: Steep this sparkling matcha with mint leaves or extra lemon slices for more flavor.

Sparkling Matcha Tea

Ingredients
2 cups sparkling water
2 matcha tea bags
2 tsp honey
1/8 cups water
1 lemon, juiced
1 lemon, sliced for garnish

Directions
Pour sparkling water in a Mason jar and steep tea bags for at least 3 hours, covered in the refrigerator.
While matcha steeps, heat water and honey in a small saucepan over medium heat. Stir until combined, about 5 minutes. Remove from heat and place in the fridge to cool.
After 3 hours, remove tea bags from Mason jar. Add lemon juice and honey simple syrup to sparkling matcha and stir to combine.
To serve, fill two tall glasses with ice and pour sparkling matcha over.
