We used baby bella (AKA cremini) mushrooms for this recipe, but we also recommend using button, oyster, or portabella mushrooms. You can really use whatever mushrooms you have on hand, as long as they are diced up finely for this recipe.

Ingredients
1 tbsp olive oil
1 cups baby bella mushrooms, finley diced
1 cups heart of palm, finley diced
2 tsp garlic powder
2 tsp onion powder
1 tsp black pepper (AIP - omit)
Directions
Heat olive oil in a medium pan over low-medium heat.
Add mushrooms, heart of palm, and spices to the pan and sauté for 10 minutes.
Let rice cool for 5 minutes and then serve with protein or a main dish.
