You’ll need a few tools to make this dairy-free coffee creamer at home. Since it’s made with an almond milk base, you’ll first need to prepare fresh almond milk using just two ingredients: raw almonds and filtered water. Soak the almonds in a Mason jar or any lidded container and strain with a cheesecloth to remove the water. A blender is recommended for creating a smooth texture, though a food processor will also work.

TIPS:
- You can swap the maple syrup for raw honey if you prefer. Just keep the amount the same to ensure this dairy-free coffee creamer remains TRUEPALEO™.
- We recommend Ceylon cinnamon for this recipe, which has greater health benefits than cassia (AKA Saigon) cinnamon.

Apple Pie-Spice Dairy-Free Coffee Creamer

Ingredients
1 1/2 cups raw almonds
8 cups filtered water, divided
2 tbsp ground Ceylon cinnamon
1 tbsp ground cardamon
1 tbsp ground nutmeg
4 tbsp maple syrup
Directions
Pour almonds and 4 cups water into a 32-ounce lidded Mason jar. Seal the jar and let sit in the refrigerator for at least 8 hours.
After soaking, strain and discard liquid. Add almonds to a blender with another 4 cups of water. Process until smooth.
Strain mixture through a cheesecloth into a small saucepan. Add spices, maple syrup, and apple. Simmer over medium heat for about 8 minutes.
Let cool, then pour into a lidded jar through another stainer, and store in the refrigerator for up to a week.
