Beet juice has great potential health benefits, but isn’t the tastiest drink on its own. We added some flavor to our beet juice drink to help it go down smooth.

If you’ve ever browsed the grocery store aisles, you’ve likely noticed vibrant bottles of beet juice adorning the shelves. Beet juice is growing in popularity not just for its striking color, but also for its impressive health benefits. 

Research shows that the active compounds in beetroot provide several potential benefits, including antioxidant and antitumor properties, lower blood pressure, improvement of blood lipid levels, reduction of blood glucose, and enhanced exercise performance.¹  

Though the health benefits of drinking beet juice are promising, there is one potential setback, and that’s the taste of pure beet juice. It’s known for an earthy, somewhat metallic taste, which for many is not preferable to consume often. That’s why in this recipe, we choose to pair it with other natural foods that will enhance and sweeten the juice without any artificial flavorings sometimes found in storebought beet juice.  

If you do buy beet juice, watch out for the sugar content. Many brands are loaded with sugar to make the flavor more palatable, which is a precursor to many chronic diseases. Always check the ingredients label to determine what is really in your favorite brand of beet juice. 

TIPS:

  • The type of apple you use will affect the overall taste of your beet juice. Try with your favorite apple, then adjust according to your preference. For a more tart flavor, try a Granny Smith, or to up the sweetness, use Honeycrisp. 
  • Swap lemons for limes to get a slightly different flavor profile.  
  • Use a fine-mesh strainer to strain the pulp from the juice if you prefer!

Beet Juice with Lemon, Apple, and Ginger

Ingredients

  • 5 cups coconut water

  • 2 large beets, peeled and chopped

  • 1 apple, peeled and chopped

  • 1 in. fresh ginger, peeled and chopped

  • 1 lemon, juiced

Directions

  1. Place all ingredients in a blender. If it needs more water, add more coconut water.

  2. Blend on high for about 30 seconds, until texture is smooth.

  3. Pour into a drinking glass. Let chill for at least 30 minutes or longer before serving.
