Top zesty balsamic chicken breasts with a sweet berry topping for a fresh weeknight dinner!

Need a fresh take on chicken? This summery recipe uses ripe strawberries and fresh basil to bring dinner to the next level. You can even grill the chicken instead for that smoky BBQ taste you crave!

Start with boneless, skinless chicken breasts. If they’re on the thick side, you’ll want to pound them until they’re about 1-inch thick. Remember, the thinner the chicken is pounded, the quicker they’ll cook. They’ll also cook evenly if you pound them out, too.

You can do a quick marinade, but for best results, it’s best to plan ahead and do this overnight. The marinade is a simple mix of balsamic, olive oil, garlic, red pepper and black pepper. These zesty flavors pair great with the sweet strawberry topping. The stronger the flavors, the better!

When you’re ready to cook, simply grill (or sauté) the chicken on both sides until golden brown. It will take about five minutes per side, depending on how thick they are. It’s best to use a thermometer to make sure the internal temperature reaches 165°F to keep from under- or over-cooking.

While the chicken cooks, toss chopped strawberries with fresh basil. Then top the chicken with the strawberry-basil mixture, and serve!

Tip:

  • This recipe makes for a great salad topper! Serve over baby spinach or baby kale.

Ingredients

  • 4 large chicken breasts, pounded 1-inch thick

  • 4 tbsp balsamic vinegar

  • 2 tbsp olive oil, divided

  • 2 garlic cloves, minced

  • 1/4 tsp red pepper flakes

  • 1/4 tsp black pepper

  • 1 cups fresh basil, chopped

  • 2 cups strawberries, chopped

Directions

  1. Set the chicken breasts in a plastic bag or shallow dish. Whisk the balsamic vinegar, 1 tablespoon of the olive oil, garlic, red pepper flakes, and black pepper. Then pour evenly over the chicken. For best results, marinate a few hours or overnight.

  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chicken to the hot pan and cook for about 5 minutes per side, or until golden brown and cooked through.

  3. Meanwhile, toss the strawberries and basil together.

  4. To serve, top each chicken breast with the strawberry basil mixture and finish with more black pepper, if you wish.
