The piña colada is a tropical cocktail combining the sweet and tart flavors of coconut and pineapple with rum. While enjoying a cocktail can be a part of Paleo lifestyle, following our 85/15 guideline, we’ve left out the alcohol to make a classic non-alcoholic virgin pina colada mocktail you can enjoy anytime. It’s just as indulgent as the cocktail.
You can make these for getting caught in the rain with your partner or multiply the ingredients to serve a whole group. Just remember to look for pineapple juice with no added sugar or substitute with pure coconut water instead. Because pineapple and coconut both contain antioxidants and high levels of electrolytes, this Paleo Piña Colada is a healthy, guilt-free treat to enjoy on a hot day.

Virgin Piña Colada

Ingredients
1 cups pineapple chunks, fresh or frozen
1/3 cups coconut cream
1/2 cups pineapple juice
3/4 cups ice cubes
Directions
Place pineapple, coconut cream, pineapple juice, and ice cubes in a blender and blend until smooth.
Pour piña colada into glasses or mason jars. Garnish with a pineapple wedge and serve immediately.
