The ice cubes are made with pomegranate seeds for the final touch in this Strawberry Sour Mocktail. Not only do they have an appealing crunchy texture, but pomegranate seeds provide many health benefits. Pomegranates contain tons of antioxidants that are great for reducing inflammation in the body.
We recommend using a cocktail shaker to mix all your non-sparkling ingredients for the best results. However, if you don’t have a cocktail shaker, a mason jar with an airtight lid works just as well. And if you find yourself without a muddler, don’t worry—you can use a fork or even a potato masher to create the puree in a pinch. These simple swaps ensure you can still craft a delicious mocktail with the tools you have in your kitchen.

Strawberry Sour Mocktail

Ingredients
2 tbsp pomegranate seeds (AIP – some need to avoid)
1/2 cups water
1/2 cups strawberries; de-stemmed and halved, plus more for garnish
1/2 cups raspberries
4 rosemary sprigs, divided
1/2 lemon, juiced
1/4 cups no-sugar added pomegranate juice
2 cups cold sparkling water
1/2 cups ice, divided
Directions
Evenly distribute pomegranate seeds into an ice cube tray. Fill up each cavity with water and freeze for up to 4 hours.
In a cocktail shaker, add strawberries, raspberries, 2 rosemary sprigs, and lemon juice. Muddle berries and rosemary into the lemon juice.
Add pomegranate juice and ½ cup regular ice to the shaker. Put the lid on and shake for several seconds.
Place 4 pomegranate ice cubes each into 2 cocktail glasses. Strain mocktail from shaker between both glasses. Add sparking water to fill.
Garnish each glass with a sliced strawberry and rosemary sprig.
