Homemade jerky is one of the easiest and healthiest snacks you can make. Just choose your meat, marinate with your favorite seasonings, dehydrate, and you’re done. It’s a simple way to prep a savory, protein-packed snack that’s ready whenever hunger hits.  

We used an oven for this recipe since dehydrators can be expensive and hard to find. The oven—or even an air fryer—is a more accessible method for making homemade jerky. However, if you do have a dehydrator, set it to 130°F and cook the marinated pork for about 8 hours, checking periodically to ensure it’s fully dried before removing.

Tart raspberries add more depth to this homemade jerky, while also complementing tarragon’s subtle, bittersweet flavor. Not to mention, raspberries have a variety of health benefits. In an animal study, raspberry polysaccharides prevented weight gain, high cholesterol, and fat accumulation.1 Raspberries also contain flavonoids that have been linked to improved brain function and may help protect against age-related cognitive decline.2 

TIP: Don’t like raspberries? Swap them out in this recipe for another tart fruit like strawberries or cherries to maintain the flavor pairing.

Raspberry Pork Homemade Jerky

Ingredients

  • 4 tbsp fresh tarragon

  • 1 tsp black pepper (AIP – omit)

  • 6 oz fresh raspberries

  • raw honey

  • 1 tbsp water

  • 2 lb pork loin, cut into 1/2 inch thick slices

Directions

  1. Wash and roughly chop tarragon. Add to a medium saucepan with black pepper and raspberries and mash together.

  2. Dilute honey with water and add to raspberry mixture, mashing more until it turns into a puree.

  3. Place saucepan with puree on the stove and bring to a boil, stirring often, then remove from heat and let cool.

  4. To a gallon zip-close bag, add sliced pork loin and raspberry puree. Marinate for at least 2 hours in the fridge, or overnight for optimal flavor.

  5. Heat oven to 200°F. Line a baking sheet with parchment paper.

  6. Remove pork slices from marinade and place on baking sheet. Bake 3-4 hours, until dried but still pliable. Allow to cool completely before enjoying.
