Popsicles are to summertime like coffee is to mornings, and these delectable Rainbow Popsicle treats bring a fun rainbow twist to snack time, as a healthy dessert, or just in time for Pride Month.
No need to worry about the added sugars and colorants you’ll find in store-bought brands, these are made entirely of coconut water, fruits, and vegetables. Coconut water and banana are the base for each color, with both providing electrolytes like potassium, magnesium, and sodium to keep you hydrated on sweltering days.
If the layering process is too tedious for you (or you’re short on time), pour each color into a single mold to end up with a variety of individual flavors. Alternatively, you could pick one color you prefer and multiply the ingredients by six to have a batch of single-flavored popsicles. Just make sure you have a good popsicle mold on hand before getting started.
Tip:
- Getting a true blue can be tricky, so to enhance the blue layer’s color, soak or boil purple cabbage in water and use ¼ cup of the water as a natural dye. If the cabbage water is still too purple, a pinch of baking soda should do the trick.

Rainbow Popsicles

Ingredients
3 cups coconut water
4 bananans, halved
1/4 cups frozen strawberries
1/4 cups frozen cherries, pitted
1/4 cups oranges, peeled and chopped
1/4 cups frozen mangos
1/4 cups frozen pineapple
1 kiwi, peeled and sliced
1 cups baby spinach
3/4 cups frozen blueberries
1/4 cups beets, chopped
Directions
To make the red layer: Blend ½ cup coconut water, half a banana (chopped), strawberries, and cherries in a blender until smooth. If the mixture is too thick, add more coconut water.
Divide mixture between popsicle molds, using a spoon to get an even layer in each mold. Place in freezer for 5 minutes while rinsing out the blender and mixing the next layer.
To make the orange layer: Blend ½ cup coconut water, half a banana (chopped), oranges, and mango in a blender until smooth. Repeat step 2.
To make the yellow layer: Blend ½ cup coconut water, 1 banana (chopped), and pineapple in a blender until smooth. Repeat step 2.
To make the green layer: Blend ½ cup coconut water, half a banana (chopped), kiwi, and spinach in a blender until smooth. Repeat step 2.
To make the blue/purple layer: Blend ½ cup coconut water, half a banana (chopped), and ½ cup blueberries in a blender until smooth. Repeat step 2.
To make the violet/magenta layer: Blend ½ cup coconut water, half a banana (chopped), ¼ cup blueberries, and beets in a blender until smooth.
Freeze popsicles overnight. If they don’t release easily from the mold, run the bottom of the mold under warm water or place in a large bowl with warm water. Wiggle the mold before you pull the popsicle out.
