Craving a pumpkin spice or chai latte? Why not have both, but in caffeine-free smoothie form?

This easy recipe takes all the warming fall flavors you love, and puts them on ice to suit those warmer mornings or afternoons. It’s filled with creamy pumpkin, dates, spices, vanilla, and bananas for a vegan-friendly smoothie bowl that tastes like pumpkin pie!

We love making this recipe thick enough to serve in a bowl with a spoon, but you can add a bit of extra dairy-free milk to the mix to make it thinner to enjoy as an easy on-the-go drink.

To give this smoothie bowl a little extra kick, we included warm chai spices like cinnamon, cardamom, and ginger powder. Feel free to use fresh ginger here if you like. You can also add a bit of cloves or nutmeg!

To make your pumpkin smoothie bowl, simply add all ingredients to a blender. We recommended starting with the liquids on the bottom so the solid ingredients don’t get stuck in the blades as you blend. Unless you have a high-powered blender like a Vitamix, it’s best to chop up the dates and bananas before adding so they’re easily integrated into the smoothie.

Once your smoothie is blended and creamy, pour it into a bowl and top with coconut and pecans. You can also get creative and add other types of nuts, Paleo granola, a sprinkle of cinnamon or more banana slices.

Enjoy your pumpkin smoothie bowl right away. You can also make it in advance and store in a Mason jar in the fridge for 1-2 days.

Pumpkin Chai Smoothie Bowl

Ingredients

  • 1 1/2 cups coconut milk

  • 1/4 cups pumpkin puree

  • 1 date, pitted and chopped

  • 1/2 tsp vanilla extract

  • 1/4 tsp cinnamon

  • 1/8 tsp cardamom powder

  • 1/8 tsp ginger powder

  • 2 bananas, sliced and frozen

  • 1/2 cups ice

  • 1/4 cups cup unsweetened shredded coconut, for topping

  • 1/4 cups chopped pecans, for topping

Directions

  1. Add all ingredients to a blender (except the coconut and pecans). Blend on high speed for about one minute, or until it’s creamy and smooth.

  2. Pour the smoothie evenly into two bowls and top with shredded coconut and chopped pecans. Enjoy!
