Ingredients
- 1 ½ lb boneless pork meat
- 1 large eggplant, chopped roughly
- 1 red bell pepper, chopped roughly
- 1 onion, chopped roughly
- 2 cloves garlic, pressed
- 1-in piece of ginger, peeled and finely chopped
- 1 can of coconut milk
- 2 star anise pods
- 2 cinnamon sticks
- 2 tsp Szechuan peppercorns
- 1 orange peel, sliced thin
- 1 bundle of fresh parsley, chopped
Instructions
- Place all ingredients (up to the orange peel) to a large pot and add just enough water to cover. Bring to a boil, then reduce heat to low.
- Add the orange peel to the stew and continue to simmer for 2 to 3 hours.
- Add the chopped parsley and cook another 5 minutes. Serve hot.
