Calling all vegetarians, vegans, and veggie lovers—barbecues are no longer something to dread, thanks to these delicious Mushroom Shish Kabobs! We paired the spicy kick of jalapeño with the sweet taste of pineapple to create unique and flavorful shish kabobs, tied together with a quick and savory balsamic-based marinade. Who knows, you might even convert some hot dog lovers with these “meatball” mushrooms. 

Mushrooms offer a variety of health benefits. According to a 2017 scientific review, mushrooms can act as a prebiotic in the body, helping to stimulate the gut microbiome.1 Most mushrooms are also high in potassium,2,3 an essential nutrient for overall health.  

When it comes to balancing our sodium-to-potassium ratio, it should ideally be around 1:5. However, this ratio is often imbalanced due to the high levels of added sodium in processed and packaged foods. Adding more potassium-rich foods like mushrooms to your diet may help restore this important nutritional balance and support your body’s health.

TIPS:

  • Try colorful bell peppers in you Mushroom Shish Kabobs if you’re not a fan of jalapeño’s heat, and use yellow squash in place of pineapple if you’d like to cut back on the sweetness. 
  • If using wooden skewers, soak in water for about 30 minutes before assembling shish kabobs.

Mushroom Shish Kabobs

Ingredients

  • 1 lb button or cremini mushrooms

  • 1/4 cups balsamic vinegar

  • 2 tbsp olive oil

  • 2 garlic cloves, minced or pressed

  • 1 tsp oregano

  • 1/2 tbsp black pepper

  • 1/4 tbsp red pepper flakes

  • 1 cups pineapple chunks

  • 1 cups jalapeños, sliced in rounds

  • Parlsey, chopped (for garnish)

Directions

  1. Clean mushrooms with a damp cloth and cut the stems.

  2. In a large bowl, whisk balsamic vinegar, olive oil, garlic, oregano, black pepper, and red pepper flakes until fully incorporated.

  3. Add mushrooms and stir to coat, or transfer everything to a zip-close bag. Marinate for about 15-30 minutes.

  4. Preheat grill to medium-high and grease with oil.

  5. Thread mushroom, pineapples, and sliced jalapenos onto the skewers. Grill for 10-15 minutes, rotating halfway, until tender and blackened.

  6. Remove shish kabobs from grill and let sit for 5 minutes. Garnish with parsley and serve.
