This recipe is full of nutrient-dense eggplant and sweet potatoes. Specifically, sweet potatoes are loaded with fiber, which can act as a prebiotic, meaning it helps nourish the beneficial bacteria in your gut.1 Sweet potatoes have also been known to strengthen the intestinal barrier, which is the protective lining that allows the body to absorb nutrients and block harmful substances.2  

TIP: Elevate the flavors in this eggplant casserole by adding either black pepper, rosemary, thyme, basil, cinnamon, or cumin to taste.

Ingredients

  • 2 large eggplants, diced (AIP - subsitute with zucchini)

  • 3 sweet potatoes, diced

  • 4 shallots, diced

  • 1/2 cups extra virgin olive oil

  • 1 lb ground pork

  • 3 tbsp oregano

  • 2 tbsp garlic powder

Directions

  1. Preheat oven to 400°F.

  2. In a 13" x 9" glass pan or casserole dish, mix eggplant, potatoes, shallots, and ground pork. Season with oregano and garlic powder. Top with olive oil until evenly coated.

  3. Bake for 30-40 minutes or until sausage is cooked and eggplant is golden.
