This recipe is full of nutrient-dense eggplant and sweet potatoes. Pork & Eggplant Casserole

Ingredients
2 large eggplants, diced (AIP - subsitute with zucchini)
3 sweet potatoes, diced
4 shallots, diced
1/2 cups extra virgin olive oil
1 lb ground pork
3 tbsp oregano
2 tbsp garlic powder
Directions
Preheat oven to 400°F.
In a 13" x 9" glass pan or casserole dish, mix eggplant, potatoes, shallots, and ground pork. Season with oregano and garlic powder. Top with olive oil until evenly coated.
Bake for 30-40 minutes or until sausage is cooked and eggplant is golden.
