If you are looking for a milk that’s tasty and dairy-free, this Pistachio Milk is the perfect solution. Made with only three ingredients, this Pistachio Milk is simple to make. All you have to do is soak the nuts in water overnight, strain, and blend together with water (see tips for ideas of how to use this water for other recipes). 

Pistachios contain tons of beneficial nutrients like fiber, healthy fats, phytosterols, and antioxidant compounds which promote heart health and can help reduce the risk of heart disease [1]. Who knew such a tiny food could have such a big impact on your health? 

If you are looking for non-dairy milk with a little more sweetness, consider adding a few pitted Medjool dates to your pistachio milk when you throw all the ingredients into the blender. Adding dates to a recipe is a great way to naturally add sweetness to dishes. Even though they are Paleo, just be sure to limit your in-take and not overdo it with the dates.  

You can also add a fruit of your choice to enhance the flavor. Simply chop the fruit and add it to the blender after soaking and straining the nuts. To enhance the flavor profile, try pairing pistachios with these fruits: strawberries, raspberries, blood oranges, and cherries. 

TIPS:  

  • For a more precise strain, use a cheesecloth instead of a strainer. Be sure to gently wash your cheesecloth by hand in warm water with dish soap and hang dry to maximize reuse. 
  • Reuse the old pistachio water in your breakfast smoothie for an extra nutrient boost.

Pistachio Milk

Ingredients

  • 1/2 cups raw pistachios

  • 2 cups warm water

  • 2 cups room temperature water

Directions

  1. In a bowl, combine raw pistachios with warm water and soak overnight (at least 8 hours).

  2. Strain the soaked nuts. Either discard the water or set aside and save for smoothies or other recipes.

  3. Add the soaked nuts and room temperature water to a high-speed blender, blend until smooth.

  4. Pour final mixture into a clean jar with a lid.

  5. Seal the jar tightly and store in the refrigerator for up to a week.
