To make your Blueberry-Cherry Beet Smoothie, simply add all the ingredients (except the flax seeds) to a blender and mix until creamy and smooth. Pour into your favorite glass and drink as is, or top with extra blueberries and a sprinkle of flax seeds.

Tips:

  • Frozen fruit gives smoothies a thick and creamy consistency; fresh fruits tend to get mushy. For best results, slice the bananas ahead of time and freeze until ready to use. Ingredients

  • 1 cups coconut milk

  • 3/4 cups frozen blueberries, plus more for topping

  • 1/2 cups frozen cherries

  • 1/2 cups beets, grated

  • 1 frozen banana, chopped (AIP - substitute with chopped pineapple)

  • 1 tbsp flax seeds

Directions

  1. Add all ingredients except flax seeds into a blender. Blend on high speed for 50-60 seconds, until creamy and smooth. For a thinner mixture, add more coconut milk.

  2. Pour smoothie into a glass. Top with extra blueberries and sprinkle with flax seeds, if desired. Serve immediately.
