
If you like your guac uber-green and extra smooth, try this Paleo-friendly green goddess guacamole! It’s great in everything from taco bowls to lettuce burgers, and even a healthy dip for veggies.
We used herby cilantro, green onions, and parsley to get this guacamole extra green. You can also use more traditional green goddess herbs like chives, tarragon, or even chervil. It’s also AIP-friendly! Just be sure to skip the optional black pepper if you’re on an auto-immune protocol diet.
They key to this green goddess guacamole is the way it’s prepared. Instead of mashing it until thick, we put all the ingredients in a food processor and pulsed until whipped and fluffy. To get that pungent, oniony flavor, we used a combination of garlic powder and dried onion flakes. Of course, you can always use fresh red onion and garlic instead!

Ingredients
2 ripe avocados
2 tbsp cilantro, chopped
2 tbsp green onions, chopped
2 tbsp parsley, chopped
1/2 lemon, juiced
1/4 tsp black pepper (optional, omit for AIP)
1/4 tsp onion flakes
1/8 tsp garlic powder
Directions
Combine all ingredients together in a food processor until smooth. Serve immediately.
