We combine carrots with the flavors of cinnamon, cloves, and nutmeg to recreate the comforting taste of carrot cake. Not only do these energy balls taste delicious, but they also contain great health benefits. Carrots are high in carotenoids, polyphenols, and vitamins that support eye health. [1]
These energy balls only take 10 minutes of prep time, and no oven or heat is necessary! For a quick snack, keep them in an airtight container in the fridge for up to a week, grabbing one when you are headed out for an on-the-go treat.

No-Bake Carrot Cake Energy Balls

Ingredients
1 cups cashew butter (AIP – omit or sub)
3/4 cups dates, pitted
1 cups walnuts (AIP – omit or sub)
1 cups carrots, shredded
1/4 tsp nutmeg (AIP – omit or sub)
1 tsp ginger, finely grated
1 1/2 tsp cinnamon
1/2 tsp cloves
2 tbsp flaxseeds, optional (AIP – omit or sub)
Directions
To a food processor, add cashew butter, dates, walnuts, carrots, nutmeg, ginger, cinnamon, cloves, and flaxseed. Blend until a workable dough is formed.
Use a tablespoon to evenly scoop out the mixture. Roll into 10 balls.
Chill in refrigerator for at least 30 minutes before serving.
