Sip on this rich, creamy coconut banana smoothie for a tropical escape!
If you normally waste too much time putting a laundry list of ingredients into the blender for a single smoothie, this recipe is for you! We bring it back to basics with a simple, naturally sweet smoothie that only calls for two ingredients (three, if you count the ice!).
We used one large banana here, but you could use two small ones instead. For best results, slice the bananas ahead of time and freeze them until ready to use. They’ll blend up quick, and add the cold creaminess you’re after. You might not even need more ice cubes if you use enough frozen banana slices.
This recipe works best with a full-fat coconut milk, but beware: many canned coconut creams aren’t Paleo! Some brands contain guar gum, which are made from guar beans, or other unhealthy ingredients and additives. It’s best to find coconut milk that contain only coconuts and water, like this brand.
To make your coconut banana smoothie, simply add all ingredients to a blender and process until creamy and smooth, about one minute. You can pour and drink it as is, or top with banana slices and coconut flakes for a little added flair. Stick a straw in it, and enjoy!

Ingredients
1 banana, frozen
1 cups coconut milk
1/4 cups ice cubes
unsweetened shredded coconut, for topping (optional)
banana slices, for topping (optional)
Directions
Add all ingredients to a blender. Process for 1 minute, or until creamy and smooth.
Pour the smoothie evenly into 2 glasses and top with banana slices and a sprinkle of shredded coconut, if desired. Serve immediately.
