Ingredients
 
  • 10 oz wild caught tuna, pre-cooked
  • ½ apple, chopped
  • ½ cup celery, chopped
  • ½ cup grated carrots
  • ¼ cup dried cranberries
  • ½ lemon, juiced
  • 1 ½ tbsp curry powder
  • ¼ tsp black pepper
  • ¼ cup Paleo mayo
  • 1 head butter lettuce, for serving
  • 210 cup green onions, chopped, for garnish
  • ¼ cup cilantro, chopped, for garnish
Instructions
 
  1. In a bowl, combine all ingredients (through the mayo) to make the tuna salad.
  2. Scoop the tuna salad into the lettuce leaves.
  3. Top with chopped green onions and cilantro, then serve!
