Ingredients

  • 1 cup shredded carrot, patted dry with a paper towel 

  • 14 cup almond butter, cashew butter, or pecan butter 

  • 14 cup refined coconut oil, room temperature

  • 312 Tbsp. maple syrup

  • 1 tsp. pure vanilla extract 

  • 1 large egg 

  • 1 cup almond flour 

  • 13 cup coconut flour 

  • 14 cup arrowroot flour 

  • 34 tsp. baking soda 

  • 112 tsp. ground cinnamon 

  • 14 tsp. ground ginger 

  • 14 tsp. ground nutmeg 

  • 14 tsp. ground cardamom 

  • 12 cup pecans, toasted and chopped

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. 

  2. Use an electric mixer to beat almond butter, coconut oil, maple syrup, vanilla extract, and egg until creamy. 

  3. In a separate bowl, whisk flours, baking soda, cinnamon, ginger, nutmeg, and cardamom. Mix in wet ingredients. 

  4. Stir in carrot and chopped pecans until well combined. 

  5. Use a large disher to scoop 12 heaping mounds onto baking sheet.

  6. Bake 10-12 minutes or until bars are golden brown. Let cool 5 minutes, then transfer to a cooling rack.
