This fresh, wild fish dish comes from a modern-day Paleo warrior who has a love for anything that comes from the ocean. - 2 wild caught Pacific cod filets
- 2 tablespoons organic coconut oil
- 1 teaspoon each: fresh sage, rosemary, and lavender.
- 1 cup fresh, sliced mushrooms
- Juice from ½ fresh lemon
- ½ lemon thinly sliced
- 1-2 kale leaves
Rinse cod and pat dry. In medium sauté pan, heat oil over low heat. Place filets in oil and sprinkle evenly with spices. Place mushrooms in oil to the sides of the fish. Drizzle fresh lemon juice over fish and mushrooms. Cover and cook just until cod can be flaked with a fork, about 10 minutes. Transfer to serving bowls and garnish with remaining lemon slices and kale before serving. Serves 2.
